Kitties Cooking on Sunday



Hahahaha!  No seriously, we did not do da cooking, but we kept pace in da kitchen to oversee what food fing was going on.

Apple Pancake - Gluten and Lactose Free

Apples:
3 large green apples (you can use more if you like) - peeled, cored and sliced.
3 tablespoons sugar (we only used one but it would probably be better with 3)
1 tsp cinnamon
2 Tablespoons freshly squeezed lemon juice
5 tablespoons parve margarine (we used earth balance natural buttery spread) it is gluten free, lactose free, vegan and non-GMO.  Although it does list that the natural flavor is derived from corn so if corn is your problem, be aware of that.

Batter:
3 large eggs
3/4 cup water (or you can use a milk substitute)  we use water for most things and it is fine.  We still can't figure out why everything has to be some kind of milk based thing.
3/4 cup Gluten Free Flour (we used Bob's Red Mill)
1/4 tsp salt
1 tsp aluminum free baking powder (you might be able to leave this out) I put it in because I thought it would help to make the batter rise.

Toppings:
confectioners' sugar
pure maple syrup
or - apple butter for even more apple flavor (note that pure apple butter does not contain butter.  Check the lable)

Preheat oven to 450 degrees F.
Prep:
Combine the apples, sugar, cinnamon and lemon juice and toss them all together to coat them.
Next, melt the "butter" in the pan and saute the apples until they are soft.  The green apples seem to take a longer time, therefore holding their shape better in the end result.  Anywhere from 6 - 12 minutes would be ok depending on the apple type.
When apples are soft put them in a 8x8 square pan or if you have more apples, you can use a bigger pan.  The idea is to have enough to fill the bottom of the pan.

Batter prep:
Whisk the eggs and water (or milk) until well blended.  Add the flour, salt and baking powder and stir until it is slightly lumpy.  Pour the batter over the apples and bake until golden, about 20 minutes.
Put your desired topping on it and cut into pieces and serve.  YUM!
